Temakizushi, also known as hand rolls, are the simplest and most convenient way to host a sushi party at home. You prepare all the ingredients beforehand and then everyone can make their own temaki the way they please. It’s a very common thing we do in Japanese households because it’s so convenient (at least for the one preparing it) and it’s also a fun dining experience for the whole family!

Jun Nakajima, CHEF AND FOUNDER
Raised in a restaurant household, Jun's love for food began at a very early age. His parents have owned and operated a Japanese restaurant for over 30 years where he practiced and honed his culinary skills.
Somewhat forced upon, he was taught the art of sushi making in his teenage years. He quickly fell in love not only with the art but the endless opportunities that came with it.
He has traveled around the globe to try different styles of sushi, most importantly to Japan.
After college, Jun had taken an opportunity to live in the motherland of sushi, working for something completely outside the culinary field. In those two years his appreciation of the culture, people, history and food deepened.
He became addicted to the food scene and found himself traveling from one end of the island to the other, eating and drinking some of the best foods and drinks he's ever had. This experience became the seed which eventually bloomed to become The Sushi Man.

    the one thing I've always had a hard time with is opening the Inari without tearing them. Out of a whole can I might get two without ripping it. Very frustrating🤣🤣🤣

      They can be very delicate. If you can, find the ones that are in a big plastic pouch. They're usually bigger packs but tend to be more durable than the canned ones.

    I just form them with my hands, you get your hands nice and wet, and add a bit of salt and rub it in, and then just lay out the rice on your hand, then put your filling in the middle, close it up with both hands, and then press making a triangle shape with both hands while rotating the ball. This way you aren't destroying the enviroment with so much plastic wrap.

      Yes you can add corn starch or cook it longer, both will help thicken the sauce. You can also add more sugar in it but of course that would alter the flavor. Hope that helps!

    I always wanted a yanagiba, but I could never justify spending that much on a fish cutting knife, instead I bought 2 gyutos and a santoku and a cleaver.

      Yeah, it's definitely considered more of a specialty knife. Gyuto and santoku are much more versatile for everyday cooking, can't really go wrong with them.

    It is very similar to mentsuyu, or simply tsuyu, which is soup base, I made a large quantity, the only extra adition was a little kombu.

    Do you need those gojirushi cookers like a lot of people suggest? I have an instapot so hoping that's enough to avoid another kitchen appliance i never use. :)

      Zojirushi is the brand I recommend as well. If you plan to cook rice often then I highly recommend getting one but if not, then the stovetop method or instapot should work just fine.

    Your videos are so clear and everything is explained so well that I’m ready to try making sushi again. But the book is wonderful and even if I use the videos as a visual, it’s great to have the book for absolute clarification. Together, you have everything you need to know. 🍣

    Thank you for your video. I love making poke with the Bluefin and Yellowfin that I catch each year. We are going to try your variation! We have other additions like mango, jicama, diakon and shredded carrot

    I always sharpen my knife so it will cut just like that but it never does, always makes the roll move a bit, what is the secret to cut in a slice like you do? Sharper knife?

      Sharp knife is a must but also the cutting board makes a difference. I use commercial plastic ones in most of my videos which are ok, but I highly recommend Hi-soft boards. They're made from high quality synthetic material and is perfect for sushi. I have one but it's enormous so a pain to use at home. Yoshihiro and Tenryo are both great brands that make them (amzn.to/45hTMSB). Hope that helps!

    I find California grown Nishiki medium/short grained rice makes perfect sushi rice and it happens to be reasonably priced compared to California grown koshihikari rice. Japanese koshihikari rice is even more expensive under this current administration. A two minute rinse is all Nishiki rice needs btw.
